Is there some way to sort leads by most recent activity? Or maybe we can generate a report somehow?

Is there some way to sort leads by most recent activity? Or maybe we can generate a report somehow?
That could prove tricky to achieve since “Activity” can be many different things across many different kinds of related records.
I suggest that you add a new custom field on the Leads “Latest activity”. Then have a few workflows fill that field whenever a new call is made or edited, or a new Meeting, across all the related modules that are relevant to you.
This should make it possible to then add the new custom field to the list view and sort.
