when i try in activity to send a mail to a customer, the FROM dropdown is always empty, i’ve already create an inbound and a outbound email, but still nothing happens. what i’m missing?

did you check the “allow users to send from this mail account”-option?

This is probably your fix, however if not make sure the user you are using has an email address
where i can find this scheck?
Admin -> Email settings -> " Users may send as this account’s identity" (2 rows above the “send test email” button)
So i can’t configure more then 1 smtp to send the mail? why a dropdown if i can make just 1 smtp?
Users can add individual mail accounts too, that’s the first option. Secondly, more outgoing mail servers can be configured, but I’m not sure if you can make them available to users too.
