I have been delinquent in keeping my installation updated. Now I want to get the latest and greatest. Since I am so old what is the appropriate path to take?

Best practice First take a back up of 7.3.1. Then get 7.4.x upgrade check all your functionality custom code works. then back up 7.4. the follow the same till 7.8.2.
This may take some time but if u feel any version is not good for you then you can install the old version. I hope Suite does not have provision to degrade our system.
