I have many contacts where I have only a firstname like “Anne” but not yet here lastname, can i add contact WITHOUT her lastname and let it be EMPTY ?

No, Last Name is built to be the mandatory field. I would just put “Anne” in the last name, or something like “(empty)” and then fix it later.
yes, make first name mandatory in your case and remove last name mandatory from Studio.
