We are currently thinking on purchasing suiteCRM but I am not sure how the iPhone integration works. Can I send e-mails via my iPhone (and than via Exchange) that are captured by suiteCRM?
What happens with contacts I create on my iPhone? Are they captured as well?
And how can I change field names in the suiteCRM?

Are you using the demo, or do you have a SuiteCRM instance set up? You won’t be able to access the admin panel on the demo. Once you get SuiteCRM set up and installed, you would be able to access the admin panel and Studio is available there.
