Configuring an inbound email handler that automatically creates Cases to make it assign them to a known login user (placeholder user), of your choice

Reassigning the Cases assigned to the placeholder user using a Workflow to one of:
- ALL Users (but do not use this one)
- ALL Users in Role
- ALL Users in Security Group
You could also set the workflow to assign to a particular user who is an employee.
