Iād like to know where can I āuncheckā or turn off auto email reminders when logging a call for a lead. I would like to change the default behavior as I donāt want the lead/prospect customer to get an email whenever we log a call.

So, if you click your username on the top-right, you will be taken to your Userās Edit view.
On this page, if you navigate to the āAdvancedā tab, you can modify the settings on the right to your preference.
(Such as, If you have āEmail Inviteesā unchecked, it wonāt pop up automatically when logging a call/meeting)
