I’d like to know where can I ‘uncheck’ or turn off auto email reminders when logging a call for a lead. I would like to change the default behavior as I don’t want the lead/prospect customer to get an email whenever we log a call.

I believe this is based on your User Preferences.
So, if you click your username on the top-right, you will be taken to your User’s Edit view.
On this page, if you navigate to the “Advanced” tab, you can modify the settings on the right to your preference.
(Such as, If you have “Email Invitees” unchecked, it won’t pop up automatically when logging a call/meeting)
