I am not sure where to go to change the item display in the subpanel so my agent will only one the latest contracts according to the contract’s date.

Go to Admin->Studio->Your_module->Subpanel->Your subpanel-> when you click on that Default and hidden field show , set Date as Default.
Save and deploy then check.
