Is there any documentation with examples that can help me understand what to put in the form fileds when setting up an External OAuth Provider? I’m confused on what I should be putting for “Name” and “Client ID” and also wondering where I would find those so I know what to enter on that. Thanks in advance!

I haven’t tried without doing the Azure setup stuff, but I’d suspect you can’t.
