While exporting quotes and invoice I noticed that none of the products in their line items are being exported in the CSV file.
Is it possible to do so?
If yes, is there a way to only export certain fields and not all of them?

Exporting the records mostly exports data from the module that you are trying to export. However Invoice and Quotes are an exception, As the line items are stored in different tables. You should look for some customized solution.
