Can anyone save me a lot of time and give me a pointer to which files and/or database fields to edit to change the default currency from dollars to UK pounds

For future reference, I believe you should also be able to do this in the CRM itself by navigating to Admin > Locale.
(This should also update it in the config file)
You can modify the system currency on this page, under the “System Currency” section.
