I would like to add a button that the customer can click to approve the quote. I envision the email body or pdf having a link back to the suitecrm system and upon clicking the link, the quote would change to approved and from there the contract/invoice would automatically generate. Is this possible?

It is possible with a little custom coding yes, The link in the pdf would link back to a custom entrypoint in your suite installation which would contain the logic for updating the quote. Something similar was done when developing the Events module where emails are sent out and the recipient clicks a link to update their attendance status.
