Can the end user (myself) change the values in “type” & “Industry” when creating an account to better fit our industry?

Assuming you have Admin access to the instance, you should be able to change the Dropdown values as you please.
You can do so by going to The Admin panel -> “Dropdown Editor”
In this page, find the dropdowns called “Industry_dom” and “Account_type_dom”
You should be able to click into these and edit the dropdowns as you wish!
