How can we set up different emails for a user when using the email module to send out emails. At the moment it only lets us use the one email from the drop down but doesn’t let us type any email address ourselves or assign multiple outgoing emails

There are several guides on email setup. You can create multiple individual accounts in Emails -> Settings for inbound/outbound and you can also add group email accounts in Admin -> Inbound Email.
