When I try yo create Line Item under create Quote, there is no calculation function in sub-total after input the total and discount. The total and discount will change to zero after the shipping tax is calculated.
How can we remove the shipping tax and add in GST? How to change the tax %?
To change Tax dropdown = go to the dropdown in studio > line items > Tax

Yes, in UK this is set as 20%
Simply make the 20% in the Tax dropdown list the top option and by default the 20% is set
