I’m wondering if it is possible to extend the reach of the Activity Stream to include more modules?
Managers want to be able to see what happens on the CRM.
Or is there any way at all that there can be a trial of what users are doing e.g. creating notes/editing contact information etc.

Both of these require code changes of different levels.
Extending the Activity Stream to include other modules should be possible using the steps Ian states here:
However, keeping logs of user activity on a deeper level, (ie, Edting records), wouldn’t be possible by standard and would require far greater code customizations.
