How can I change what fields I want to see when using MASS UPDATE option?
ex. I want to update Country field for all my Accounts. (and there is no country field when clicking mass update)

Admin > Studio > Module > Fields > Select field > “Mass update” √ check the box
To confirm this is only possible with dropdown & relate types I believe
You cannot mass update text fields like name, address without using a workflow AOW
